General Purpose:

Makes final adjustments to the cheese prior to sending the cheese to the towers

Job Duties and Responsibilities:




  • Drain whey from Enclosed Finishing Vats
  • Monitor transfer of cheese from Enclosed Finishing Vats to curd hopper
  • Salts cheese at targeted pH's (Customer Specifications)
  • Adds water as needed for moistures (Customer Specifications)
  • Run tower pH's
  • Measure tower moistures on Perten
  • Wash and Sanitize Enclosed Finishing Vats
  • Maintain records and documents


Secondary Duties




  • Maintain safe working conditions for employees and compliance with all state and federal regulations regarding health and safety issues
  • Dedicate effort to safety as we expect every employee to leave work in the same condition as they arrive
  • Follow all DFA good manufacturing practices (GMP) and work in a manner consistent with all corporate regulatory, food safety, quality, and sanitation requirements
  • Exhibit the values and ethics of Dairy Farmers of America through honesty, discretion, and sound judgment
  • Adhere to all DFA Quality, Safety and GMP policies and procedures and report any nonconformity
  • Attend required training, including but not limited to, Safety, GMP, Hazard Analysis and Critical Control Point (HACCP), and Safe Quality Foods (SQF)
  • Perform other work as assigned



Minimum Requirements:

Education and Experience

  • High School Diploma or GED required
  • Ability to interpret safety rules, operating and maintenance instructions, procedure manuals and job safety analysis
  • Basic computer skills

Knowledge, Skills and Abilities

  • Perform work independently as required
  • Perform necessary routine cleaning and preventive maintenance
  • Able to work in a hot environment
  • Be able to work a full 12 hour or longer shift plus overtime as needed
  • Learn the theory for operating and cleaning procedures and practices involved in the operation and equipment of the position, including any new operations and equipment assigned by management
  • Perform the job duties resulting in a high-quality product
  • Able to learn and perform various functions of the department to perform the essential functions
  • Maintain confidentiality of operations, records and documents
  • Must be able to read, write and speak English
