This Is a Hands-On Restaurant Operations Role

We are seeking a Procurement Manager who understands food - not just purchasing theory.



This is a fully on-site role based at Newark Liberty International Airport supporting multiple high-volume restaurant locations. You will work directly with General Managers and culinary teams to ensure accurate ordering, proper receiving, product rotation, and disciplined inventory control.

What You'll Be Responsible For



  • Overseeing daily and weekly food & beverage ordering across multiple airport restaurant units
  • Monitoring par levels and adjusting based on seasonality, sales trends, and airport traffic
  • Ensuring proper receiving, storage, and FIFO execution
  • Coaching managers on ordering accuracy and waste control
  • Reviewing invoices and resolving discrepancies
  • Monitoring product usage and identifying shrink or over-ordering
  • Supporting new unit openings with product setup and ordering processes
  • Ensuring compliance with approved vendor programs
  • Partnering with operations leaders to protect margin and minimize waste



What You Must Bring



  • Minimum 3 years of hands-on restaurant purchasing, kitchen management, or food inventory leadership experience
  • Strong understanding of perishable food products (proteins, produce, dairy, dry goods)
  • Experience setting and managing par levels
  • Experience conducting physical inventory and reconciling variances
  • Comfort working in a fast-paced, high-volume food environment
  • Ability to coach restaurant managers on ordering discipline
  • Basic computer proficiency (email, inventory systems, spreadsheets)

  • You understand how waste, spoilage, and portion control impact food cost
  • You are comfortable walking into a kitchen and identifying operational inefficiencies
  • You are detail-oriented and hands-on
  • You can influence others while holding them accountable



This role reports directly to local Operations Leadership with partnership to Corporate Procurement.
