Dietary Manager Opportunity

Emerald Coast Behavioral Hospital provides inpatient treatment services to adolescents and adults at our 86-bed facility in Panama City, FL and outpatient services to adolescents and adults at our four outpatient centers located throughout the Florida Panhandle. Additionally, we offer specialized treatment for active duty military members through our Military Resiliency Program, specialized chemical dependency treatment and TMS therapy for chronic depression.

The Dietary Manager is responsible for managing and coordinating all activities of the Dietary Department which includes providing nutritional and attractive meals for patients and facility employees, maintaining an organized and sanitary environment, monitoring supply inventories and purchasing food and supplies as required, ensuring proper storage of food and supplies and managing effective dietary staff in accordance with facility policies, physician orders, patient care plans and appropriate regulations.

Job Duties/Responsibilities:

  • Plans, organizes, and manages the Dietary Department to meet the standards set by the hospital and regulatory agencies.
    • Hires, supervises, develops, evaluates, and disciplines staff. Ensures staff is knowledgeable and competent to perform duties by providing orientation, training, and continuing education as reflected in departmental policies and records. Meets with staff members on an ongoing basis to review performance and provide feedback, guidance and instruction as needed. Assures appropriate work production and documentation in accordance with policies and regulations through audits, supervision, and goal setting. Makes job assignments and sets priorities.
    • Maintains emergency food supply, department schedule, food orders, and monitors cleaning schedule and temperature log.
    • Provides technical guidance and administrative direction over diet planning, menu formulation, preparation and service of regular and therapeutic diets. Plans menus, conferring with the Dietician as needed, to confirm that menus conform to nutritional standards and government and established regulations and procedures.
    • Ensures the snack program meets dietary needs.
    • Provides nutritious, well-prepared, and palatable meals in a timely and consistent manner while adhering to menus and diet orders. Verifies appropriate meals/snacks are served to patients with special dietary needs. Monitors food production, maintaining use of standardized recipes and menus and ensures proper preparation and storage of food and supplies. Participates in maintaining records of the patient's food likes and dislikes as needed.
    • Purchases food and supplies within budget and maintain a supply to adequately cover each meal and emergency contingencies in accordance with accreditation standards and State and federal regulations.
    • Recommends fiscal or budgetary requirements necessary to maintain service within the department. Monitors department on an ongoing basis and adjusts FTE's to patient census.
    • Produces, creates and provides quality and timely reports/documentation on a monthly/quarterly basis, as required. Attends daily, monthly, quarterly meetings as expected.
    • Meets facility policies and State and Federal regulations regarding sanitation and safe food handling techniques. Monitors food preparation, food storage areas and equipment to verify they are maintained in a clean, safe and orderly manner; maintains strict adherence to procedures regarding cleaners or hazardous materials or objects; verifies universal precautions and infection control, isolation, fire, safety and sanitation practices and procedures are followed; and promptly addresses any hazardous conditions and equipment. Develops plan of correction following State, Federal and QA surveys, as needed.
    • Revises and maintains policy and procedure manuals.
  • Prepares, seasons, cooks, and serves food for patients, staff, visitors, and special functions. Uses cook, chill or conventional cooking methods to prepare quality foods for patients/cafeteria to achieve customer satisfaction.
  • Provides care and sanitation of equipment in production area. Adheres to sanitation and safety standards. Prepare, dilutes and uses cleaning agents according to manufacturer's guidelines. Maintains personal hygiene using approved hand-washing techniques. Cleans/sanitizes work area and equipment per standards and procedures.

Qualifications

Requirements:

  • Five (5) years' experience in food service required. Two (2) years' experience in dietary supervision preferred. Healthcare food service experience preferred.
  • High School Diploma or Equivalent required. Associates degree or equivalent from a two year college or a vocational or technical school preferred.
  • Certified Dietary Manager (CDM) or Registered Dietitian (RD) required. If RD, Fl. Dietitian Licensure required.
  • ServSafe Certification or Equivalent required within 90 days of hire.
  • Ability to work a flexible schedule to meet the needs of the department. Dietary department is open 7 days per week and staff work hours vary between 5:30a to 6:30p.
